Slow Cooker Sausage Stuffed Acorn Squash Recipe

Naturally sweet acorn squash meets salty breakfast sausage, walnuts, molasses and apple cider for a super-easy, satisfying crockpot meal. All you need to round out this hearty one-pot dish is a green salad and some dinner rolls.

Crockpot Sausage Stuffed Acorn Squash Recipe

Serves 4-6

2 medium acorn squash
1 teaspoon olive oil
1 pound sage breakfast sausage
½ cup chopped onion
1 clove garlic, minced
½ cup plain breadcrumbs
¼ cup chopped walnuts or pecans
1 large egg, beaten
¼ teaspoon salt
⅛ teaspoon black pepper
¼ cup molasses
½ cup apple cider or apple juice

Slice stems off the squash, and scoop out the seeds. Slice off a small piece from the bottom of each squash so it will sit level in your slow cooker. Brush the edges and insides of each squash with olive oil.

In a sauté pan crumble and brown the sausage. Drain the sausage, and place it in a large bowl. Remove half of the drippings from the pan, and then cook the onion and garlic in the remaining fat until softened. Add the onion and garlic to the sausage. Mix in breadcrumbs, walnuts, egg, salt and pepper. Fill the squash with the sausage mixture.

Use cooking spray to coat a piece of heavy-duty foil that’s large enough to cover the whole inside of your slow cooker. Place the squash cut side up on the foil and brush the exposed flesh with the molasses. Pour the cider down the sides of the slow cooker. Cover and cook on low for 6 hours.

Remove squash to a cutting board by lifting it up by the foil, and cut in halves or quarters. Serve as a side dish, or as a main dish with a green salad and rolls.

Preview of The Southern Slow Cooker Cookbook


I'm very excited to announce that as of yesterday, "The Southern Slow Cooker" has officially gone to print! It's been one heck of a whirlwind ride this past year, and pretty amazing to think that it was right around this time last year that I was feverishly penning a book proposal for Ten Speed Press with the hopes that it would be me they wanted to write this book. Then it was contracts, negotiations, recipe development, writing, research, recipe testing, testing and more testing, no sleep, and a whole lot of leftover food to contend with along with a couple of extra pounds free of charge for the whole family. And here we are...all finished. Holy time warp. From here on, it's all anticipation until that August release date!

I'm so pleased with how everything turned out. Photographer Erin Kunkel took some lovely photos, and as you can see from the little preview of the full front and back cover, Ten Speed Press has one stellar design and editing team. I'd also like to give a special thanks to two amazing ladies who were kind of enough to pen a few glowing words after taking the time to read through the galley copies; Southern cookbook authors, food experts, and all around cool ladies Virginia Willis and Martha Foose. Thank you both so very much.

So, here it is. If you're a slow cooker/crockpot cooking lover already, I hope you'll pre-order a copy. If you're not yet a fan of slow cooker cooking, I hope this book might just change your mind :)

A Sneak Peek at "The Southern Slow Cooker" Cookbook

So, the final edits for The Southern Slow Cooker: Big-Flavor, Low-Fuss Recipes for Comfort Food Classics are nearly done and a release date for the book is set for August 20, 2013. I'm excited to report that you can now pre-order the book for a reduced price on Amazon, Barnes and Noble, Overstock, to name a few. It seems this book thing is really happening!

Now that I have a little breathing room from writing, editing, testing, writing, editing and testing again, I thought I'd give you guys a little preview of where all of this hard work is headed. In addition to 60-plus Southern-inspired slow cooker recipes, I've added some bonus ones, from homemade biscuits and relishes to second day meals (as in what to do with all of those leftovers kinda thing) along with beer, wine and cocktail pairings (with recipes kindly donated by professional mixologists). 

All in all, I think the book is pretty darned fun, and I really hope you'll like it. In the meantime, I've compiled a few photos that I snapped with my iPhone (I am an admitted Instagram junkie) while recipe testing for the book to whet your appetite a bit. Stay tuned for more updates and announcements as they come.
